Artichoke & Lemon Chicken

Do you like the taste of artichokes? I didn't until the past few years. Now, I love the sour taste. It reminds me of spinach and sauerkraut - two other things I crave once in awhile. Add lemons and capers, and this dish will make you pucker up for sure! I really enjoyed this dish.

Artichoke & Lemon Chicken

2 lemons
4 T. butter
1 onion, sliced
1 can artichoke hearts, drained and rinsed
1/4 cup capers, drained
6 boneless, skinless chicken thighs
Salt and pepper

Juice one lemon and slice the other one into rounds.
In a large skillet, over medium heat, melt 2 T. butter and saute onions until translucent.

Add artichoke hearts, capers and lemon juice. Stir to combine, and then move the vegetables to the edge of the skillet.

Season both sides of chicken thighs with salt and pepper. Place them in the center of the pan. Cook for 3-4 minutes and then flip to cook on the other side.

Reduce heat to medium-low and move the vegetables over top of the chicken. Place lemon slices in the pan. Continue to cook chicken until internal temperature reaches 165 degrees (about 8 minutes).
