What do yo do when you have a few really ripe bananas? You either make banana bread or you look on Pinterest for another banana recipe. I found this one that looked good. It was easy, and these were just right for a little snack.
2 ripe bananas
2 cups old fashioned oats
1/4 c. almond butter
1/4 c honey
2 T. mini chocolate chips
1/2 t. cinnamon (optional)
Mash bananas in a large mixing bowl.
Stir in remaining ingredients.
Using a large cookie scoop, form balls in the palm of your hand.
Refrigerate for at least 2 hours for them to firm up.
Makes about 12. Store in refrigerator.
