Spinach Tortellini Soup

This is a fast, healthy soup from The Complete Mediterranean Diet cookbook by Michael Ozner. I think it took me a total of 20 minutes from start to finish.

Spinach Tortellini Soup

4 cups low-sodium, fat-free chicken broth
2 cloves fresh garlic, minced
4 scallions, chopped
1/4 t. ground pepper
5 ounces fresh cheese-filled tortellini
2 cups fresh spinach leaves
Fresh grated Parmesan cheese (optional)

Heat broth in a pot and add garlic, scallions, and pepper. Bring to a boil, then reduce to medium heat. Add tortellini and cook for 10 minutes. Add spinach and cook for an additional 5 minutes or until pasta is tender. Serve with some Parmesan cheese, if desired.

Makes 4 servings
