Roasted Sweet Potatoes

Last Thursday, Heidi and Daniel came over for dinner, and I made salmon and sweet potatoes. Both were delicious. Here is the sweet potato recipe, and the salmon recipe will be coming soon.

Roasted Sweet Potatoes

4 medium sweet potatoes
1/4 cup fresh parsley, chopped (or use a smaller amount of dried)
1/4 cup grated Parmesan cheese
2 T. olive oil
2 cloves garlic, minced
Salt and pepper to taste

Preheat oven to 400 degrees. Peel sweet potatoes and cut into cubes.
Combine rosemary, garlic, Parmesan cheese and olive oil in a large Ziploc bag or bowl.
Add potatoes and coat with oil mixture.
Place potatoes on a rimmed cookie sheet coated with PAM.
Bake for 20-25 minutes. Flip potatoes and bake for another 20-25 minutes.
Remove from oven and serve immediately.

Makes 4 servings.
