I've always considered myself a butcher of vegetables. When I'm finished preparing a meal, it looks like the vegetables have gone to slaughter.
This isn't the same kind of Vegetable Butcher Cara Mangini describes in her new cookbook. She sees a vegetable butcher as one who can masterfully slice and dice everything from artichokes to zucchini and she shows you how.
I love this cookbook. For each vegetable, she tells you how to select, store, prepare, cook and use it in several recipes.
There are tons of photos demonstrating butchery skills.
If you want to eat more vegetables like I do, this is a fantastic book to have. Highly recommend.
