Crockin' Girls were featured, and this was one of their favorite crock pot meals. It was simple to make, and we all loved it.
Slow Cooker Chicken Tortilla Soup
2 large boneless, skinless chicken breasts, cut into 1/2-inch pieces
1 14.5 ounce can diced tomatoes with green chilies (I used Ro*tel)
1 8 ounce can tomato sauce
1 10.75 ounce can cheddar cheese soup
2 c. chopped carrots
8 ounces frozen corn
1 large yellow onion, chopped
2 cloves garlic, minced
1/2 t. chili powder
1/2 t. ground cumin
Garnishes: Shredded cheddar cheese or Mexican blend, Tortilla chips
Place all ingredients (except garnishes) in Slow Cooker. Set to low for 6-8 hours.
